4 fl oz skim milk
0.5 oz egg yolk
0.2 fl oz vanilla extract
0.3 oz olive oil
2.5 oz all purpose flour
8 oz raspberries

Sweet Cream Crepes with Raspberries

Servings: 4


Place the milk, egg yolk, extract and oil in a bowl and whisk together. Add the flour and whisk until no lumps are visible. Let it rest for 20 minutes. Heat a 6 inch non- stick pan over medium heat. When hot, ladle in 1 oz of crepe batter and move around the pan until coated. Return to medium heat and cook for 30 seconds. Flip the crepe over using a spatula and cook another 30 seconds. Remove and cool between layers of paper towels. Place the 8 crepes on the counter. Divide the Dulci Sweet Cream between them. Roll up and place 2 on each plate. Top with the raspberries.
