2 cups frozen whole –kernel corn, thawed
1 cup no salt-added black beans, rinsed and drained
1 medium papaya, seeded and diced, or 1/2 cup diced honeydew or Crenshaw melon or cantaloupe
4 10-inch fat-free flour tortillas or 6 inch pita pockets
4 cups chopped romaine

Servings: 4  (One wrap per serving)  


1. In a medium bowl, stir together the corn, beans, papaya and the Dulci South Beach Seasoning.

2. To assemble, on a griddle or in a large skillet, lightly heat 1 tortilla on medium- high heat for about 30 seconds on each side. This will make the tortilla supple and easy to rap.

3. Transfer the tortilla to a plate. Place 1 cup romaine on the tortilla, leaving a 1 – inch border uncovered. Spoon 1/2 cup of the corn mixture – (corn, beans, papaya, melon, and Dulci South Beach Seasoning) over the romaine. Roll up that edge. Fold over 1 inch from both sides. Starting at the bottom, roll up the tortilla jelly-roll style, pushing in any filling before reaching the top. Turn over the wrap. Place a toothpick about one-third from each end, securing the loose end. Slice the wrap in half on the diagonal. Set the wrap with the cut sides up on the plate.
