6 oz whole wheat flour
0.1 oz baking powder
2 oz egg
8 fl oz milk
1/2 fl oz olive oil
0.4 oz lemon zest
1 fl oz canola oil for the griddle

Whole Wheat Pancakes with Caramelized Fruit and Nut

Servings: 4


Place flour and baking powder in a bowl and mix well. In a separate bowl, add the milk, egg and olive oil; beat with a whisk. Add the dry ingredients and beat until a batter has formed and there are no lumps. Place the canola oil on the pre heated 350 degree griddle. Divide the batter into 8 pancakes, cooking 4 of them at the time. When the batter is first put on the griddle add a pinch of lemon zest to each pancake. When the pancake begins to bubble flip it with your spatula. Cook another 2 minutes and remove. Place the pancakes in a plate and top with the Dulci Caramelized Fruit and Nut. Garnish with browned almonds.
